"It's super easy!"
Brown trout portions x 2
1 tsp honey
Fresh ginger
3 tbsp soy sauce
1 tsp olive oil
Coconut rice:
1 cup rice
1 cup water
1 can (400g) coconut milk
Handful of cashew nuts
1. Finely chop a thumb sized piece of ginger and add to a pestle and mortar, then add one teaspoon of honey and 3 tablespoons of soy sauce and a teaspoon of olive oil, crush and mix all together.
2. For the coconut rice: Add the ingredients to a saucepan. Bring to the boil until the liquid reduces fully. Crush cashew nuts and sprinkle on top.
3. Pour all over the fish and place in a small dish. Place in oven at 180 degrees for 15 mins.
