Baked Ling with a Herb, Horseradish and Tomato Crust

An easy-to-prepare mid-week meal for the whole family to enjoy.

 

 

 

 

 

 

 

Ingredients

  •  2  ling fillets
  •  10g fresh coriander
  •  10g fresh parsley
  •  6 cherry tomatoes
  •  2 cloves of garlic
  •  100g breadcrumbs
  •  1 lemon
  •  Salt and pepper (to taste)

 

 

 

 

 

 

 

 

 

 

 

 

 


Method

  1.  Preheat the oven to 200°C.
  2.  Zest the lemon.
  3.  Finely chop the coriander, parsley, garlic and tomatoes.
  4.  Mix together with the horseradish, lemon zest and seasoning.
  5.  In a blender, blitz the ingredients to a paste.
  6.  Mix the paste with the breadcrumbs.
  7.  Spread the mixture onto the ling fillets and place on a greased baking tray .
  8.  Bake in the oven for approximately 20 minutes.
  9.  Serve with seasonal vegetables.
