Bothy Oysters

Scottish Oysters with black pudding and whisky. The richness of the black pudding works incredibly well with the clean taste of Scottish oysters.

Ingredients

  • 4 shucked oysters (reserving juice and shell)
  • 4 slices of black pudding
  • 2 tsp of apple sauce
  • 50ml malt whisky
  • 30g cheese shavings
  • lemon wedges
  • 1 tsp parsley
  • salt & pepper (to taste)

Method

  1. Preheat the grill to a medium heat. 
  2. Microwave the black pudding for 1 minute (Microwave Power: 800 Watt) 
  3. Remove the skin from the black pudding and mix with the apple sauce, then season with salt and black pepper.
  4. In a pan, poach the oysters for 1 minute in their own juices along with the whisky.
  5. Remove the oysters and set aside. 
  6. Add the whisky liquid to the black pudding mixture and beat well. 
  7. Shave a few fine slices of cheese. 
  8. Place 2-3 teaspoons of the black pudding mixture into each oyster shell.
  9. Top with an oyster.
  10. Cover with cheese shavings. 
  11. Grill for 1-2 minutes until the cheese melts. 
  12. Serve with lemon wedges.
