Hake with Crisp Sweet Garlic and Olive Oil

Ingredients

  • 4 x hake fillets
  • 2 tbsp olive oil
  • 4 cloves of garlic
  • 2 tbsp extra virgin olive oil
  • 1 lemon
  • 10g fresh flat leaf parsley
  • Sea salt and black pepper (to taste)

 

 

 

 

 

 

 

 

 

 

 

 


Method

  1.  Squeeze the juice from the lemon.
  2.  Finely slice the garlic cloves and finely chop the parsley.
  3.  Heat the olive oil in a heavy-based frying pan until it is very hot.
  4.  Season the hake fillets.
  5.  Lay them in the pan and fry for 1 to 2 minutes.
  6.  Add the garlic and keep frying for approximately 3 minutes.
  7.  With the garlic still in the pan, turn the hake fillets  and cook for  a further 3 minutes. Be careful not to burn the garlic.
  8.  Remove the fish from the pan onto a serving plate.
  9.  Take the pan off the heat and add the olive oil and a pinch of sea salt to the garlic and juices left in the pan. The residual heat of the pan will be sufficient to warm it all through so there’s no need to put it back on the heat.
  10.  Add the lemon juice and the parsley and stir.
  11. Spoon the garlic and juices from the pan over the top of the hake fillets and serve
