Cooking herring, or “silver darlings” as they’re referred to in the fishing industry, in oatmeal is a traditional Scottish recipe.

 

 

 

 

 

 

 

 

 

 

 

Ingredients

  • 2 herring fillets
  • Salt & ground black pepper
  • 2 heaped tbsp plain flour on a plate
  • 1 egg, beaten in a bowl
  • 75g coarse oatmeal on a plate
  • 2 tbsp vegetable oil
  • Boiled new potatoes, to serve or side salad

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 


Method

  1.  Season the herring fillets, flesh side up.
  2.  Season the flour.
  3.  Dip both sides of the fillets into the seasoned flour,
  4.  Then dipinto the beaten egg.
  5.  Then dip into the oatmeal, ensuring each fillet has a thick coating of oatmeal.
  6.  Heat the vegetable oil in a frying pan over a high heat.
  7.  Fry the herring fillets (flesh side down first) for 3 mins, until crispy.
  8.  Turn the fillets over and cook the skin side for a further 2-3 mins.
  9.  Once cooked, lift onto kitchen towel to drain any excess vegetable oil before serving.
  10.  Enjoy with boiled new potatoes and / or a side salad.
