I serve with a side salad or green vegetables and roasted maris piper potatoes
Lemon sole portions x 2
1 clove garlic
1 lemon
A handful of parsley
Flour
Olive Oil
Seasoning
1. Chop a generous handful of parsley and finely chop one clove of garlic, then add both to a pestle and mortar with two teaspoons of olive oil, the juice of ¼ lemon, a sprinkle of salt and pepper and mash up.
2. Sprinkle flour onto a plate and gently tap both sides of the fish into the flour covering both sides. Sprinkle pepper over the fish (salt at the end).
3. Heat a pan with olive oil. Once the pan is hot enough cook the fish on both sides for approximately 2 mins each until it starts to turn golden.
4. Once cooked, spoon the parsley and garlic mixture on top of the fish and serve.
