Mackerel Fillets in a  Lemon and Rosemary Jus

Ingredients

2 x mackerel fillets

Knob butter

Lemon juice

Few sprigs of rosemary

Salt & black pepper

To Serve

Cheesy potato wedges

Method

1. Heat some olive oil in a frying pan & add the mackerel fillets, seasoning with salt & pepper.

2. Cook on medium heat for about 15 minutes, turning occasionally, until browned & cooked through. 

  1. Remove fish from pan, remove pan from heat & wipe out any remaining oil.

4. Add a knob of butter to the pan, which will still be hot enough to melt the butter without burning it. Once butter has melted, add as much lemon juice & rosemary as you like & stir well, then pour over the fish.
