Mackerel Fillets in a Lemon & Rosemary jus with cheesy potato wedges & petites pois

Ingredients

4 Mackerel Fillets

A knob of butter

1 Lemon

Rosemary

Salt & Pepper


Method

Heat some olive oil in a frying pan & add the mackerel fillets, seasoning with salt & pepper.

 

Cook on medium heat for about 15 minutes, turning occasionally, until browned & cooked through. 

 

Remove fish from pan, remove pan from heat & wipe out any remaining oil.

 

Add a knob of butter to the pan, which will still be hot enough to melt the butter without burning it.

 

Once butter has melted, add as much lemon juice & rosemary as you like & stir well, then pour over the fish and serve with homemade cheesy potato wedges and petite pois.
