4/5 small tomatoes, deseeded and chopped
1 red pepper
1 yellow pepper, both sliced
1 onion, sliced
Black olives
Green Chilli to taste
2 small garlic cloves
Sea salt
For the potato wedges
Small potatoes
Olive oil
Chilli
Paprika
Fry onion and peppers in olive oil until soft
Add, garlic and chilli and salt, continue to cook for a minute
Add tomatoes, cook for another minute.
Add a little water, just so it doesn't dry out
Place cod on top, cover pan and cook through.
Finally add and warm through halved olives to taste.
Serve with
Potato wedges (small potatoes cut in half, dried then coated in olive oil , sprinkled with, chilli and paprika
Put in a preheated oven @ 200c for 30/40mins
