Ingredients

  •  1 x 125g hot smoked salmon portion or hot smoked salmon flakes
  •  200g pasta
  •  100ml white wine
  •  142ml double cream
  •  40g parmesan cheese
  •  85g pine nuts
  •  ¼tsp dried dill
  •  Salt and pepper (to taste)

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 


Method

  1.  Bring a large pan of salted water to boil, add the pasta and cook for approximately 10 minutes, until al dente.
  2.  Flake the hot smoked salmon portion into chunks (if not using flakes).
  3.  Grate the parmesan.
  4.  Bring the wine to the boil in a large frying pan, then simmer for 1 minute.
  5.  Reduce the heat, stir in the cream and season well.
  6.  When the pasta is cooked, drain and tip it into the frying pan with the sauce.
  7.  Add the parmesan and flaked salmon pieces to the pan and mix gently together.
  8.  Pile into bowls and sprinkle with the pine nuts and dried dill.
