Scallops
Good quality black pudding
Apple
Butter
Rocket
Lemon Juice
Balsamic Glaze
Salt and pepper to taste
If you have received scallops in their shell, shuck them carefully with a knife, and then fry the meat in butter with lots of seasoning.
Grill your black pudding.
Peel and thinly slice apple- frying it in the butter with scallops until golden.
Put a handful of rocket on the plate and crumble over the black pudding and add apple slices.
Put your scallops on top and squeeze lemon juice over them.
I put balsamic glaze over the top.
