Smoked Salmon, Avocado and Red Onion Toast

This recipe would work just as well with smoked trout and a poached egg.

Ingredients

  • 1 ripe avocado (pitted)
  • 1 tsp fresh tarragon (minced)
  • 1 lemon (zested and juiced)
  • 100g smoked salmon
  • 4 pieces of bread (toasted)
  • 1 red onion
  • Sea salt (to taste)

Method

  1. Slice the red onion.
  2. Mash the avocado with 2 tsp lemon juice and the tarragon in a bowl.
  3. Spread a quarter of the mixture on each piece of toast.
  4. Place some red onion slices on top.
  5. Top with smoked salmon and sprinkle with salt.
  6. Garnish as desired.
