Stuffed Herring

Ingredients

    •  4 x herring
    •  55g butter
    •  1 leek
    •  55g breadcrumbs
    •  55g shelled walnut pieces
    •  140g Caerphilly cheese
    •  1 tbsp English mustard
    •  1 lemon
    •  3 tbsp fresh mixed herbs such as chives, parsley and rosemary
    •  Sea salt (to taste)

     

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 


Method

  1.  Preheat the oven to 220°C.
  2.  Slice the leek.
  3.  Roughly chop the walnut pieces.
  4.  Crumble the cheese.
  5.  Zest and juice the lemon.
  6.  Melt half the butter in a saucepan, then add the leek and cook for approximately 5 minutes, until softened, stirring occasionally.
  7.  Meanwhile, mix together the breadcrumbs, walnuts, cheese, mustard, lemon zest, 1 tablespoon lemon juice and mixed herbs.
  8.  Add the cooked leek and mix together well.
  9.  Place the herring onto a baking sheet.
  10.  Open the herring and spoon the stuffing into each fish.
  11.  Sprinkle each fish with sea salt.
  12.  Bake the fish for 15 to 20 minutes and serve with potatoes or couscous.
